Description

Whole dried red chillies, sun-cured on open floors until the skin turns a deep, glossy red — the colour that tells you the chilli was dried properly rather than force-dried in a kiln. Firm, wrinkled pods with the stems trimmed short and the seeds intact inside.

The heat is clean and forward, without the dull bitterness that comes from old or over-dried stock. Split one open and you get the raw pungency in the seeds and membrane; roast it in oil first and it softens into something warmer and rounder. That's why the same chilli behaves differently in a tempering pan than it does in a wet grind.
